Place the olive oil, chopped onion, carrots, and celery in a large soup pot or dutch oven. Add the chicken thighs and chicken broth. Add the garlic and cook for a minute. Add the stock, chicken, and seasoning and bring to a boil.

  1. Add chicken to crock pot and set on high for 4 hours. Lightly salt. Do not add liquid, it will make it's own.
  2. Heat oil in a medium saucepan. Add veggies and cook until softened but not browned.
