Our recipe this week is Bitter Leaf Soup popularly known as "Ofe Onugbu" in Eastern Nigeria. Contrary to it's name, it is a delicious recipe that has its nutritional benefits to our bodies. Bitter leaf regulates blood sugar levels and repairs impaired pancreas. Bitter leaf soup, like most other Nigerian soups is named after the particular leaf which is used in preparing it.
Instructions to make Bitter Leaf Soup:
- Wash the meats,kpomo,the intestines,the dried fish,stock fish and boil with little quantity of water.Boil for like 20mins.
- Add 1 cooking spoon of red oil,add your pepper mixed with ogiri,add your Crayfish,mix the powered cocoyam with warm water and mix well,then you pour it in the meat stock
- Allow it to thicken for 10 mins,then add your bitterleaf,salt and Maggi and for some minutes.
