Sri Lankan cashew curry also known as Kaju maluwa or cashew nut curry is so delicious, creamy and nutty in terms of flavour. But the best part of it is, it's Vegan and Gluten-free. The perfect dish for any curry lovers out there. Heat the oil and butter in a large pan and add the onions.

Instructions to make Cashew nuts and Palak curry:
  1. Heat water in a large pot. Clean the spinach and wash it thoroughly under running water. Once the water comes to a boil, add the spinach for 3-4 minutes. Drain the water from the spinach under cold water immediately.
  2. In a pan, heat oil, add coconut and fry until golden brown and remove from heat. In the same pan, add onion, chili, and garlic cloves and fry until onion turn soft and remove from heat add in the same pan poppy seeds, cinnamon, and cloves fry for minutes and switch off the flame.
  3. Put the spinach in a blender along with all fried ingredients and add tomato and Coriander leaves and make a smooth paste.
  4. Heat 2 tsp oil in a deep bottom pan and add capsicum and turmeric powder and saute for minutes. Add pasted masala and saute for a minute, add cashews and add water as per thickness and cook for 4-5 mins.
  5. Serve with rice or chapatis as you like. Thank you.
