  13. Get 1 tsp Cumin seeds
  14. Make ready 1 Onion chopped (Big)
  15. Make ready 1 tsp Ginger-garlic paste
  16. Take 2 Tomato chopped
  17. Take to taste Salt
  18. Make ready 1 tsp Coriander powder
  19. Take 1/2 tsp Red chilli powder
  20. Make ready 1/2 tsp Turmeric powder
  21. Take 1 tsp Garam masala powder
  22. Make ready 1 Potato cut into cube size (Boiled) (Big)
  23. Get 1 Carrot cut into cube size (Boiled) (Small)
  24. Make ready 1/2 Cauliflower florets (Boiled) (Small)
  25. Get 6-8 French beans cut into cube size (Boiled)
  26. Get 1/2 cup Green peas (Boiled)
  27. Get 100 grams Paneer cut into cube sized
  28. Get 1/2 cup Water
  29. Take 1 Dry red chilli
  30. Get as needed Grated coconut for garnishing
  31. Prepare as required Coriander chopped for garnishing

In fact, it is the masala paste made with coconut, red chillies, sesame seeds and other ingredients that gives it the title of Kolhapuri! The paste gives the veggies a very strong flavour, thanks to sesame and garlic, and a richness that is characteristic of coconut and poppy seeds.   1. Heat 1 tbsp of oil in a pan; add black cardamom, cloves, cinnamon stick, black peppercorn, dry red chilli, coriander seeds and white sesame, mix well and sauté till spices become fragrant.
  2. Add coconut, mix well and sauté for 1 min. or till coconut gets golden in colour.
  3. Remove this mixture in mixer jar, add water and grind to a smooth paste. Keep it aside.
  4. Heat 1 tbsp of oil in the same pan; add cumin seeds and sauté till it splutters.
  5. Add onion, mix well and sauté for 2 mins.
  6. Add ginger-garlic paste, mix well and sauté for 1 min.
  7. Add tomato and mix well.
  8. Add salt, coriander powder, turmeric powder, red chilli powder and garam masala powder, mix well and sauté for 3-4 mins.
  9. Add the prepared paste, mix well and sauté for 2-3 mins.
  10. Add potato, carrot, cauliflower, beans and green peas(boil all veg), mix well and sauté for 1 min.
  11. Add water and mix well.
  12. Add paneer, mix well and sauté for another 1 min.
  13. Remove in serving bowl, garnish with dry red chilli, grated coconut and coriander leaves and serve hot.
