Make sure the chicken is dry: We do not recommend rinsing your chicken before roasting. Once you've got the chicken out of its packaging, pat it completely dry inside and out with paper towels. Dry aging beef, while totally delicious, is old news. Sometimes I like dry dishes a lot.

Steps to make Chicken Dry Roast:
  1. Marinade chicken with chilli powder, turmeric powder, 1 tsp garam masala, 1/2 tsp ginger,1/2 tsp garlic paste, Worcestershire sauce and salt for 30 -45 minutes
  2. Give 1 whistle for the marinaded chicken.
  3. Saute onion in coconut oil. Add little bit salt which helps to saute it faster.
  4. Once it is bit sauted, add green chillies
  5. While onion is getting sauted, parallely start frying chicken in sunflower oil. Let it fry till chicken is browny on outside. Keep the fried chicken pieces aside.
  6. Once onion is at the edge of browning, add ginger and garlic paste and saute it together. Add curry leaves.
  7. When onion is sauted very well [looks well brown] Add coriander powder, 1 tsp garam masala powder and saute it well till the gravy is dark.
  8. Once the above gravy is done, add fried chicken pieces to it and mix it very well such that the gravy reaches all the chicken pieces.
  9. Once chicken is completely cooked, remove from fire and serve hot !
