The ingredients needed to make Chinese Chicken & Mushroom:
  1. Take 500 g Diced Chicken (or Beef)
  2. Prepare 30 ml Sunflower Oil
  3. Prepare 15 ml Sesame Oil
  4. Prepare 1 Onion, finely diced
  5. Take 250 g Chestnut Mushrooms (Chopped)
  6. Take 1/2 Bulb Garlic (Crushed)
  7. Prepare 1 inch fresh Ginger peeled and finely chopped/minced
  8. Take 200 g Tenderstem Broccoli Heads only, or 100g if using stalk too
  9. Get 75 g Sugarsnap Peas (each cut into 3)
  10. Make ready 300 ml Chicken Stock
  11. Prepare 30 ml Soy Sauce
  12. Get 2 tsp natural Maple Syrup (or alternative sweetener of choice)
  13. Prepare 3 tsp Red Wine Vinegar
  14. Prepare 1/2 Red Pepper
  15. Make ready 1/2 Medium Chilli (finely chopped)
  16. Prepare 200 ml Cold Water
  17. Get 2 Tbsp Cornflour
  18. Prepare Knob Butter
Instructions to make Chinese Chicken & Mushroom:
  1. Gently fry together the Chicken and Onions in the Oil until cooked and lightly browned.
  2. Add Mushrooms & Ginger, fry for a further 2 mins
  3. Add Stock and Garlic.
  4. Add Soy Sauce, Maple Syrup (or sweetener of choice), Vinegar, Red Pepper & Chilli. Gently simmer.
  5. Meanwhile, Blanch/Par-boil Broccoli & Sugarsnap Peas
  6. Add strained Peas and Broccoli.
  7. Combine Cold Water with Cornflour and stir in to the other ingredients. Remove from heat when thickened and stir in the butter to add shine.
  8. Serve with Rice or Noodles of your choice (I always use the brown rice varieties).
  9. For future recipes, you can play about with the ingredients and create your own unique dish according to your own personal preference! Possibly adjusting the quantity of Chilli, Garlic, Syrup, Vinegar, Salt, Pepper etc.
  10. I don't eat sugar if I can help it but if eating sugar doesn't bother you, you can replace the Maple Syrup with 25g sugar
